    6 oz whole wheat spaghetti
    2 Tbs. peanut butter
    1/4 C hot water
    3 Tbs tamari
    2 Tbs rice wine vinegar
    2 tsp sesame oil
    2 tsp hot chili oil
    2 C fresh mung beans
    1 cucumber peeled, seeded and diced
    chopped scallions


Cook the pasta until al dente. Drain and rinse with cold water. Mix the peanut butter, warm water, tamari, vinegar and oils. Toss the noodles with the bean sprouts, cucumbers and sauce. Top with scallions. Serve at room temperature. Serves 4.
