    500 g Crab meat (imitation) Flake-style
    1 small diced ripe Avocado
    1 wedge Laughing Cow cheese (French Onion or Herb & Garlic)
    3/4 C chopped Sweet red pepper
    1/2 C chopped Yellow pepper
    2 tbsp chopped red onion
    1/2 C chopped celery
    4 chopped Sun Dried Tomatoes
    2 Lemon wedges OR 1 tbsp Lemon Juice


Chop up the crab meat into smaller pieces
Add chopped onions, sun dried tomatoes, celery, yellow and red peppers
Add diced avocado, lemon juice and Laughing Cow cheese
Season with salt and pepper, any other spice blend (Mrs.Dash)
Mix everything together.
Use a very ripe avocado so it mixes well and has a creamy, mayonnaise-like texture
Add a little bit more lemon juice and a pinch of paprika for an extra tang.
