Ingredients

    1/2 pound lean ground beef
    1/2 cup chopped onion
    1/2 cup chopped green bell pepper
    1 can (15-ounce size) black beans, drained
    1 cup salsa (heat level as desired)
    2 tablespoons chopped jalapeno peppers
    1 box (8 1/2-ounce size) corn muffin mix
    2 cups shredded sharp Cheddar cheese, divided
    1/4 cup milk
    1 egg
    Sour cream, if desired

Directions

Heat oven to 375F. Grease 9-inch glass pie plate.

In a 10-inch skillet, cook the ground beef, onion and green pepper until beef is no longer pink. Stir in the beans, salsa and chopped jalapeno peppers; set aside.

In medium bowl, combine corn muffin mix, half the shredded cheese, milk and egg. Stir just until moistened. Press mixture on bottom and up sides of greased 9-inch pie plate. Spoon beef mixture into crust.

Bake 20 to 30 minutes or until set. Remove from oven; sprinkle with remaining 1 cup shredded cheese. Bake 2 to 5 minutes or until cheese is melted. Let stand 5 minutes. Cut into wedges. Serve with olives, salsa and sour cream, if desired.
