    200 g soba noodles
    6 cups fresh spinach, roughly chopped
    2 Tbsp olive oil
    6 cloves garlic, chopped
    2 tsp ginger, minced
    1/2 tsp cayenne peper (or to taste)
    2 cups broad beans, shelled (or canned, drained, rinsed)
    1 cup cherry tomatoes, halved


Cook noodles according to package, rinse in cold water after draining and set aside.
Heat oil over medium heat in large skillet. Add garlic, ginger and cayenne until it smells wonderful. Add a large dash of water and bring to a boil (mere moments). Add spinach to skillet and heat until wilted. Add beans and stir up, cook until heated through. Finally toss in noodles and tomatoes until noodles are reheated, mixing with tongs to distribute the spinach and flavours.

If too spicy, serve with goats cheese, feta, or sour cream (add calories/fat yourself)
