Ingredients

    10 oz spinach (if you use frozen you will need to defrost it and get out the extra water)
    3/4 cup egg beaters
    3/4 cup mozzarella, shredded
    1/4 cup mushrooms, chopped
    1/4 cup onions, chopped
    3 drops hot sauce

Directions

Preheat oven to 350. Line a 12-cup muffin tin with foil baking cups and spray with cooking spary.
Combine ingredients together and pour evenly into baking cups and bake for 20 minutes.
