    4 Chicken Breasts
    1 Cup Yellow Peppers
    1 Cup Green Peppers
    1 Cup Salsa
    1 Small Can Black Olives
    1 Cup Mushrooms
    4 Cups Cooked Rice
    1/2 Cup Light Mozzarela Cheese


Preheat oven to 425. Brown chicken breasts in a pan and cook the rice to your liking. In a medium caserolde dish add chicken then all veggies. Put rice to the side. Once the veggies are on top of the chicken cover the dish with the salsa. Use more than recomended if desired. Put in oven and bake at 425 for 40 minutes. Pull out and cover the top with the low fat Mozza cheese, return to oven and bake until cheese is melted and brown. Take out and serve over cooked rice.
Makes four servings!
