Threw this together really fast one day after work! It's easy and filling. Threw this together really fast one day after work! It's easy and filling.
Number of Servings: 6


    2 tbsp olive oil
    3 (or more) cloves garlic
    1 red and 1 green bell pepper, diced
    1 large onion, diced
    1 can kidney beans, drained and rinsed
    1 can black beans, drained and rinsed
    1 28 oz can diced or crushed tomatoes
    Spices to taste (cumin, cayenne, salt, etc)


Saute the onions, peppers, and garlic together in olive oil on medium-high heat until softened. You could reduce the olive oil or use Pam to lighten this recipe even further. After the veggies have softened add the tomatoes and beans (after draining and rinsing them). Add any spices you like at this step. Simmer for a little while and it's done!

Makes 6 approximately 1-cup servings.
