Introduction

Ingredients

    1 29 oz can Tomato Sauce
    1 15 oz can Tomato Sauce
    2 15 oz cans Black Beans
    1 15 oz can Kidney Beans
    1 15 oz can Sweet Corn
    1 medium zucchini, chopped
    1 medium green bell pepper, chopped
    3-4 tbsp chili powder, to taste
    3 cloves garlic, minced, or 1 tbsp garlic, minced
    1 tbsp olive oil

Directions

Saute the minced garlic in olive oil in large sauce pan over medium heat. Pour in tomato sauce and add chopped zucchini and green pepper. Drain and rinse beans and corn, add to chili. Add 3-4 TBSP chili powder to taste. Let cook for 20-30 minutes. Does not need to be covered, but it's best to shield with a lid so it doesn't splash all over your stove. I hate that. Makes 10 1 cup servings.
