Introduction

This rhubarb cake forms a slight custard at the bottom and doesn't last long in our household. Perfect to kick off the rhubarb growing season! For a yummy twist, use lemon cake instead of yellow. Ingredients

    1 yellow cake mix, prepared
    3 cups diced rhubarb
    2 cups sugar
    1 pint half and half

Directions

Prepare cake mix according to directions on box. Pour into lasagna pan (I use glass). Sprinkle diced rhubarb over cake. Spread sugar over rhubarb. Pour half and half over sugar. Cook at least one hour at 350 degrees. Cake should be a dark golden brown.

(May overflow a bit based on rhubarb texture and amount)
