Introduction

Same as "Coconut Meringue Cookies" but with splenda and less coconut. Makes 16 small cookies. I wrote recipe as 2 cookies per serving. Same as "Coconut Meringue Cookies" but with splenda and less coconut. Makes 16 small cookies. I wrote recipe as 2 cookies per serving.
Number of Servings: 8

Ingredients

    2 Egg whites
    dash of salt
    2/3 C Spenda
    1/2 tsp. vanilla
    1 C sweetened shredded coconut

Directions

Beat room temperature egg whites with dash of salt until soft peaks form. Gradually add in Spenda while beating until peaks are stiff and glossy.
Fold in coconut, being careful to keep "airy." Don't beat out too much air! Just fold in.
Drop by rounded teaspoon full onto baking pan sprayed with cooking spray.
Bake at 325 degrees F until set and slightly golden, about 15 minutes, or less. Center will be soft. Melt in your mouth sweetness. Here's to "GOOD CHOICES!" ENJOY!
