Ingredients

large carrot chopped
large onion chopped
large potato chopped
1/2 green pepper chopped
medium cucumber, chopped
2 stalks celery chopped
1/2 cup lettuce leaves of any kind or color chopped
3 fresh tomatoes or canned tomatoes
2 tablespoons olive oil
1 tablespoon butter
1 quart low sodium chicken broth
1/4 teaspoon turmeric
pinch of the following: basil, thyme, black pepper, parsley
or any dried or fresh herbs you like
1/4 cup barley
1/4 cup lentils
1/4 cup small pasta
Directions
Place the oil and butter in a large soup pot.
Add the chopped vegetables and saute for a few minutes.
Add the chicken broth and herbs.
Add the barley, pasta and lentils.
Bring to a boil and simmer for 30 to 60 minutes
You may puree the soup as the Irish do or leave it chunky.You can add a bit of milk to each serving if desired.
This is very versatile as you can add or omit items.
You could use rice in place of the pasta.
I've even used radish in place of the cucumber.
