    20 reduced vanilla wafers
    1 cup of flour
    1/4 cup of cold butter
    1/4 cup of brown sugar
    8oz fat free creamcheese
    1 cup of splenda
    1tbsp lemon zest
    1/4 cup of lemon juice
    2tbsp flour


first mix vanilla crumbs and brown sugar, flour and butter until crumbly then put in a 8 inch square pan lined with aluminum foil. pour crust mixture in a pat down place in 350 degree oven for 15.
put cr.cheese and sugar in bowl and mix until creamy then add eggs lemon zest and juice and flout and mix together then place on top of crust and bake in oven 28 min until center is set.

    I'm not sure if it is the flour or the fat-free cream cheese, but there is a slightly bitter flavor. I guess I just need to stick to real cheesecake as an occasional treat. - 3/27/08
