Introduction

THE beat meatballs I've ever tasted! THE beat meatballs I've ever tasted!
Number of Servings: 4

Ingredients

    Lamb, Ground, 400g
    Onions, 1 medium,
    Garlic, 4 cloves
    2 tbsp dried oregano
    1 tbsp coarse ground black pepper
    handful chopped fresh parsley
    1 tsp salt
    Egg, fresh, 1 medium

    Tomato Sauce:
    Onions, 1 medium, finely chopped
    Garlic, 3 cloves, crushed
    Olive Oil, 2 tbsp
    Canned chopped Tomatoes, 2 cans
    Mixed herbs, dried, 1 - 2 tbsp
    fresh chopped parsley and/or basil, handful

Directions

Finely chop the onion and garlic in a food processor. Add the minced lamb, dried herbs, parsley, salt and pepper and process again to mix.

Add the egg and process until the mixture clumps together like a bread dough mixture would.

Tip the mixture out and make 16 small, round meatballs.

Heat a pan of water until boiling, drop the meatballs into the boiling water carefully. Skim any scum off the surface and continue to cook until the meatballs rise to the surface and are cooked, approx 5 mins. Drain carefully and put the meatballs into a baking dish.


To make the tomato sauce;

Heat the oil in a pan, add the onions and fry until softened but not coloured. Add the garlic and fry for a few more minutes.

Add the tomatoes and herbs and cook for approx 10 - 15 mins.


Pour the tomato sauce over the meatballs and bake in oven at 190C for around 30 mins.

Optional; after 15mins break some mozzarella cheese over the top and finish baking in the oven for another 15 mins until cheese has melted. NB Add the additional calories for the cheese if using, as they have not been included in the recipe!
