Introduction

This is really great with brown rice or as a substitute for beef on a taco salad. This is really great with brown rice or as a substitute for beef on a taco salad.
Number of Servings: 4

Ingredients

    1/4 Cup fresh lime juice (about 2 limes)
    2 Tbsp canola oil
    1 Tbsp white vinegar
    1 Tsp ground cumin
    1/4 Tsp Salt
    1 sliced jalapeno pepper
    1 1/4 pounds boneless, skinless chicken breast

Directions

1. Whisk lime juice, canola oil, vinegar, cumin and salt in a small bowl. Stir in jalapeno. Place chicken on a shallow baking dish and pour marinade over it, turning to coat both sides. Cover and refrigerate for at least 1 hour, turning once, or overnight.
2.Preheat grill or pan to high heat. Spray the grill or pan with non-stick spray. Cook the chicken until no longer pink in the middle, 3 to 4 minutes per side. Let cool slightly; thinly slice crosswise. Serve warm or chilled.

    Very Good
    Made this for dinner tonight. I baked the chicken in the pan I marinaded it in...there was enough liquid that it poached the chicken as it baked making it very juicy. Oh, I used 1 Tbs olive oil in place of the 2 Tbs canola oil, and I topped the chicken with fresh cilantro & avocado when it was done. - 10/13/10

    Incredible!
    Awesome chicken dish! If you are cooking in a pan be sure to pat dry the chicken before cooking otherwise it ends of boiling instead of sauteeing. Very tender and moist too. I will absolutely make again!!! - 9/17/09
