    2 small zucchini
    2 Tbs olive oil
    Salt & Pepper to taste
    1 garlic clove, diced
    1 cup fresh diced tomatoes
    1 tsp oregano
    1/2 pound cooked Italian Turkey Sausage (sweet)
    Parmasean Cheese


Using a vegetable peeler, slice zucchini into ribbons. Over medium heat saute zucchini and 1Tbs olive oil until it's soft and edges are clear. Add salt and pepper to taste.
In another pan, heat 1 Tbs olive oil and garlic for one minute, then add tomatoes and oregano. Simmer for few minutes, then stir in sausage. Spoon over zucchini and sprinkle with parmasean.

  • Made this tonight. Very good! I only used 1tbsp oil and omitted the oil on the garlic. I also used garlic powder instead of fresh garlic. Very yummy! - 5/24/11
