    4 large portobellos
    sea salt
    black pepper
    1 small onion, diced
    2 garlic cloves, minced
    1 (10 oz) package frozen spinach, thawed and drained
    2 T chopped fresh parsley
    2 t chopped fresh thyme
    1/4 t red pepper flakes
    3 oz goat cheese
    4 T grated parmesan


1. Preheat oven to 350. Brush mushrooms with olive oil or spray with olive oil spray. Place on a baking sheet covered with parchment paper.

2. spray pan and saute onion until soft. Add garlic and saute until fragrant. Add spinach and saute just until liquid has evaporated. Add herbs and pepper flakes, and salt and pepper. Remove from heat and gently stir in goat cheese.

Divide filling among mushrooms and stuff generously. Sprinkle with parmesan and bake until mushrooms soften and filling is bubbly, about 20 minutes
