Introduction

Number of Servings: 9

Ingredients

    1.5 Cups White Flour
    1.5 tsp Baking Powder
    .25 tsp Baking Soda
    .25 tsp Ground Cinnamon
    1/8 tsp salt
    1 Egg, large
    1 cup mashed Banana
    .75 Cup Splenda
    .25 Cup Applesauce, unsweetened

Directions

- Grease bottom and 1/2 inch up the side of loaf pan with non-stick, no calories cooking spray
- combine first 5 ingredients in a medium bowl
- in another bowl, combine remaining ingredients
- add banana mixture to dry ingredients, mix just until moistened - batter will be lumpy, do not overmix
- spoon into bread pan
- bake in 350 degree oven for 50 - 55 minutes - cool 10 minutes on wire rack then remove from pan

Makes 9 slices of banana bread.

    This was very good. It was done in only 37 minutes, not 50. I used whole wheat pastry flour and added 2 Tbsp. of olive oil. I used sugar instead of Splenda. Also I used 1 tsp. of vanilla instead of cinnamon. I will make this again, it uses much less fat and sugar than my old recipe. - 6/27/09
