Introduction

This is delicious and filing as a meal or can be a side dish. This is delicious and filing as a meal or can be a side dish.

Ingredients

    4 medium or large baby zucchinis (sometimes I switch a few for yellow squash)
    1 clove garlic
    1 medium onion
    Olive oil - 2 tsp
    Spaghetti sauce, I like Boves but any kind will work, about half a jar or less
    can of cannelini beans (I put great northern on the list because cannelini weren't listed)
    grated parmesan

Directions

Slice onions in half and cut in thin slices and chop garlic. In a skillet heat the olive oil and saute the onions and garlic. After a few minutes add the zucchini and cook until lightly softened. Add the beans (rinsed) , sauce and parmesan stir and cover. Let cook like this until heated through and squash are at desired tenderness. Eat and enjoy! Simple quick and tastey!
