    7 lrg tomatoes, cut in eigths
    6 T olive oil
    4 T garlic
    3/4 t kosher salt
    3/4 t pepper
    32 oz shrimp, peeleand deveined
    1 c parsley
    4 c spinach
    4 T lemon juice
    1 c low fat feta
    4 cups cooked whole wheat pasta


Cook pasta as directed. Preheat oven to 450 degrees. Chop tomatoes into eighths and place in large baking dish with spinach. Spoon live oil and garlice over them. Sprinkle with the salt and pepper and toss. Place on top rack of oven and roast for 20 minutes. Remove baking dish and stir in remaining ingredients, except feta. After mixed sprinkle on Feta. Place back into oven for another 10-15 minutes or until shrimp are cooked. Remove and combine with pasta.
