    1.5 c. dry lentils
    1.5 c. chopped sweet potato
    2 large carrots, chopped
    1 large onion, chopped
    2 cloves garlic, diced
    7 small mushrooms, chopped
    1.5 c. frozen or fresh green beans
    0.5 c. quinoa (uncooked)
    0.5 t. cayenne pepper
    2 t. salt
    0.5 t. pepper
    1 T. cumin
    1 t. turmeric
    6 c. homemade chicken broth (no added salt)
    1 c. water
    2 c. chopped cooked chicken, mixed light & dark meat
    sprigs of fresh cilantro


Combine all ingredients except chicken & cilantro in slow cooker & cook on low for 6-8 hours.

About half an hour before the meal, add chicken to pot & mix well; cover & continue cooking 30 mins. Garnish with cilantro sprigs (or chopped cilantro) to serve.

Can be made on stovetop, of course; allow to cook for about an hour in that case.

Makes 11 1-cup servings.
