    Batter for Crepes:
    Egg, fresh, 3 medium
    Flour, white, .5 cup
    Butter, unsalted, 1 tbsp

    Crepe filling:
    Ricotta Cheese, whole milk, 1.85 cup
    Mozzarella Cheese, whole milk, 1 cup, shredded
    Egg substitute, liquid (Egg Beaters), .5 cup
    Parmesean Cheese - Grated, 8 tbsp

    Line the pan and cover crepes with:
    Spaghetti/Marinara Sauce (tomato sauce), 1 cup


In blender, combine 1st 3 ingredients + 1/2 c water to form batter. In bowl, mix cheeses with egg white and season with salt pepper, oregano and basil to taste. Pour batter in skillet sprayed w/nonstick spray; cook on med-hi until shiny. Remove crepe to a plate, fill with 1" wide strip of cheese mixture, roll up. Spread sauce in bottom of lasanga dish, line up the crepes in the dish. Top with some additional grated mozzarella and sauce. Bake 350 for 30 mins. Serve with extra sauce, and meatballs, sausage, chicken. Mangia!
