Number of Servings: 50

Ingredients

    6 large ripe tomatoes, quartered and seeded
    3 cloves garlic
    1 large onion, quartered
    1 jalapeno pepper, seeded
    juice from 3 limes
    1/2 cup fresh cilantro
    salt to taste

Directions

Quarter and remove insides of tomatoes. Slice jalapeno pepper in half and remove seeds. Peel and quarter onion. Peel garlic cloves.

Place all ingredients in a blender or food processor. (Use only 1/2 of jalapeno pepper for milder heat.) Chop/pulse until desired consistency.

If you prefer a chunkier salsa, chop ingredients into smaller pieces before placing in the food processor, then pulse for a shorter time. For a more liquid consistency, there is no need to pre-chop, the food processor will liquefy the ingredients.
