    1/2 med onion
    2 celery stalks, chopped
    1 gr. onion, chopped
    2 cloves garlic, chopped
    1/2 red bell pepper chopped
    2 c rice, cooked
    3 eggs, scrambled
    5 tbsp soy sauce, green bottle
    1 tbsp Szechuan sauce
    1 c mushrooms
    S&P to taste


Heat EVOO and saute veggies until wilted. Scramble eggs. Add cooked rice and soy sauce, szechuan sauce.
Cook for a few minutes. makes 8 1-cup servings
