Ingredients

    1 lb very lean ground beef
    1 can black beans, drained
    1 can red kidney beans, drained
    1 onion, chopped
    6 large flour tortillas
    1 8oz package 2% cheddar cheese, shredded
    1 bottle of enchilada sauce

Directions

1. Brown ground beef in skillet.

2. When beef is almost browned, add onion and cook for 1-2 min more.

3. Drain excess fat.

4. Stir enchilada sauce into the beef/onion mixture.

5. Cut tortillas into quarters.

6. Spray a 9x13 pan with cooking spray.

7. Arrange half of tortillas on bottom of pan.

8. Add half of beef mixture.

9. Top with half of cheese.

10. Repeat all 3 layers.

11. Bake at 350 for 30 min or until cheese is melted.
