    Chicken Breast, no skin, 2 unit (yield from 1 lb ready-to-cook
    Romaine Lettuce (salad), 1 cup, shredded
    *Peppers, sweet, red, fresh, 1 large, diced
    Cilantro, raw, 4 tbsp (1/4 cup, diced)
    Scallions, raw, 2 large, diced
    Arugula, 2 cup
    Pepper, black, .5 tsp

    California Navel Orange - medium orange (131g), zested & juiced
    *Kikkoman Lite Soy Sauce, 2 tbsp
    *Nakano Seasoned Rice Vinegar, 2 tbsp
    Aunt Sue's Raw Wild Natural Honey, 1 tbsp
    Ginger, ground, 2 tbsp
    Scallions, raw, 2 large
    Garlic, 2 cloves, minced
    Imperial Dragon Sesame Seed Oil, 2 tbsp
    Spectrum Expeller Pressed Organic High Heat Safflower Oil, 8 tbsp
    Pepper, black, .25 tsp
    *Sesame Seeds, 2 tbsp


Season chicken strips with pepper. Coat pan with nonstick spray and cook until no longer pink.

In a large bowl combine chicken, red pepper, cilantro, scallions, arugula, and romaine. Toss well to combine.

Sesame Ginger Vinaigrette:
Stir together orange zest, orange juice, soy sauce, rice vinegar, honey, ginger, scallions, and garlic. Slowly whisk in Sesame and safflower oil, just until incorporated. Season with pepper (and salt if desired - not counted in nutritional info). Stir in sesame seeds just before serving.
