Introduction

These are a wonderful change to traditional enchilladas. The filling would also be GREAT as a dip with Baked Tostitos. Even my picky 10 year old LOVED these! Ingredients

    1# extra lean ground beef, browned and drained
    2 cups salsa
    10 oz package frozen spinach, thawed and drained
    1 tsp cumin
    1/2 tsp salt
    8 oz Reduced Fat cream cheese, cubed
    10 Fat Free Whole Wheat tortillas
    14 oz can diced tomatoes, drained
    8 oz. 2% shredded cheddar

Directions

Heat in a saucepan, cooked ground beef, 1 cup salsa, spinach, cumin, salt, and cream cheese until melted. Spoon 1/3 cup filling down center of each tortilla; roll up and place seam side down in sprayed 9x13 baking dish. Combine tomatoes and remaining salsa. Spoon over enchilladas. Bake uncovered @ 350 degrees for 25 minutes or until hot. Sprinkle cheddar on top and heat until melted. Serve with Baked Tostitos. Makes 10-11 enchilladas -- my package had 11 tortillas instead of the 10 on the package.
