    1 cup sweet potatoes, pre-cooked and mashed
    1 cup flour
    1 tbsp baking powder
    1/4 tsp baking soda
    1 tsp salt
    1/4 cup vegetable oil


Pre-heat oven to 375 degrees.
Mash together all the ingredients until well mixed.

Form the dough into 8 biscuits and place on a cookie sheet or baking pan. Bake for 15 - 20 minutes, or until done.

  • I make these all the time, but use all whole wheat flour. You can substitute applesauce for the oil too, but they come out a little more "cakey." All my kids eat these up super-fast! - 2/24/11

  • They didn't rise as well as I would have liked but they were still really yummy! My 2 year old loved them and it was nice to sneak in an extra veggie. I roasted the sweet potatoes so they flavor was really great! - 2/2/10
