Introduction

Ingredients

    * 1/4 c rolled oats
    * 3/4 c Rice Milk (365 unsweetened)
    * 1/2 c Whole Wheat Flour
    * 1 t turbinado sugar
    * 1 T Wheat germ
    * 1/2 t Baking Soda
    * 1/2 t Vanilla Extract
    * 1/4 c Blueberries (if using frozen berries, thaw them a bit in the microwave before mixing so they don't freeze your batter)
    * Earth Balance for the skillet

Directions

Mix together dry ingredients. Make sure there are no lumps of baking soda hiding in the mix.
Pour in rice milk and vanilla, and stir until just mixed.
Fold in blueberries.

Heat a skillet (preferably seasoned cast iron or non-stick) on medium to high (varies depending on your stove) and add Earth balance to stop batter from sticking.

Pour individual pancakes onto skillet and cook until bubbles form in the center.

Add more Earth Balance before you cook the next batch.

(Nutrition info includes 2 Tbsp of Earth Balance for cooking. You could use a spray like PAM if you want to cut the fat. I use Earth Balance because I like the flavor.)
