Ingredients

    200g cooked rice
    100g asparagus
    100g cooked peas
    40g plain, low fat yoghurt
    40g stilton cheese
    tspn vegetable stock powder

Directions


Serves one as a main dish or two as side dish.

Is very useful for using up left over rice.

Dry fry asparagus in non stick pan, add peas and rice with about 1 tbspn water plus tspn veggie stock.

Make sure rice is warmed through if cold.

Take off the heat and add yoghurt.

Mix thoroughly.

Add chopped up cheese and warm gently until cheese begins to melt.

Add black pepper to taste
