Delicious, nutritious, and fancy enough to serve at a dinner party! Delicious, nutritious, and fancy enough to serve at a dinner party!
Number of Servings: 12


    2 lbs Spinach, cleaned & chopped
    1 lb reduced fat feta cheese, crumbled
    1 cup reduced fat cottage or ricotta cheese
    1 T olive oil
    1/2 large onion, chopped (about 1 cup)
    5 cloves garlic
    1 t dill weed
    1 t basil
    1 t oregano
    1 t black pepper
    1 lb package phyllo dough, thawed
    1 stick butter, melted


Sautee onions & garlic in olive oil until translucent and browned.
Mix onions, garlic, cheeses, spinach, herbs and pepper in a large bowl. Set aside.

Place half of the phyllo dough, one sheet at a time, in the bottom of a 9x13 baking pan. Brush each sheet* with melted butter before adding the next sheet. Sheets should go up the sides of the pan, forming a shell of dough.
Pour the spinach mixture into the baking dish and spread evenly.
Layer the other half of the phyllo dough on top of the spinach mixture, brushing each sheet with butter as you go.

Bake at 350 F for 30 minutes, or until the top & edges are gently browned. Let stand about 10 minutes before serving.

*You can save on fat and calories by skimping on the butter: brush every 2nd or 3rd sheet, for example. Just be sure to butter all edges that stick out of the pan, and the entire top sheet.
