Introduction

Ingredients

    1 - T. Extra Virgin Olive Oil (split into 2 halves)
    1 - medium sized head of green cabbage

    1 - pound of ground chicken
    1 - medium sized onion
    1 - 8oz. can of tomato sauce
    1 - Cup of Whole Grain Brown Rice (instant)
    1 - Cup water

    To taste:
    salt
    pepper

Directions

You will only need two pans for this recipe. In one deep skillet or stock pot, roughly chop the head of cabbage into pieces about the size of your palm and begin to saute in a HALF a tablespoon of Olive Oil over medium heat. Add a splash of water to create the needed steam within the pot. Cover and continue to stir every few minutes.

In a second sauce pan, add the finely diced onions and the ground chicken with the second half tablespoon of Olive Oil. When it is thoroughly cooked, add the can of tomato sauce, rice and water. Bring to a simmer. Add seasonings to taste. Cover for 5 minutes. After 5 minutes turn off the heat but KEEP COVERED. This will ensure the rice is cooked properly.

To plate, on a bed of the steamed cabbage, place one cup of the filling mixture over top of it.
