Ingredients

    Crust:
    5 sheets of low fat graham crackers
    10 Girl Scout Cookies (trefoils)
    5 tablespoons of butter

    Cake:
    2 lbs of tofu
    1.5 cups of maple syrup
    1 cup of corn oil
    .5 cup of lemon juice
    1 tab of vanilla
    2 tabs of arrowroot
    2 tsps of salt

Directions

Blend Filling.

Press the mixed well base into an oiled springform pan. Pour in tofu mixture. Bake 1.5 hours at 375 degrees or until golden and firm. Let cool overnight. Top with fruit preserve or fresh fruit.
