This easy to make, sweet, crunchy treat tastes great and is low fat. This easy to make, sweet, crunchy treat tastes great and is low fat.
Number of Servings: 36


    3 1/4 cups - Flour
    1 tablespoon - baking powder
    1/4 cup - almonds, sliced
    7/8 cup - fat free egg substitute (egg beaters)
    1 cup - sugar (granulated)
    1 tablespoon - vanilla extract
    1/4 cup - canola oil


Preheat oven to 375 degrees F.
Spray cookie sheets with non-stick spray or line with parchment paper or silicon mats.
In a large bowl, combine flour, baking powder and almonds.
In a medium bowl, mix egg substitute, sugar, vanilla extract and oil.
Add egg mixture to flour mixture. Stir - it will form a heavy dough.
Divide dough into two pieces. Form each piece into a roll as long as your baking sheet. Place roll on baking sheet and flatten to 1/2 inch thickness.
Bake for 25 to 30 minutes at 375, until golden brown. Remove from baking sheet and place on cooling rack. When cool enough to handle, slice crosswise into 1/2 inch slices.
Place slices cut side up on baking sheets and return to 375 degree oven for 6 to 10 minutes on each side. Slices should be lighly toasted.
