    1 C quinoa, rinsed thoroughly
    2 C black beans
    1/2 green onions
    1 C corn
    2 C grape tomatoes, slicedin half
    3 Tbs green olives, sliced
    3 Tbs picked jalepenos, chopped
    4 tsp olive oil
    juice of 2 limes


In a medium sauce pan, bring quinoa and 2 cups of water (add salt if desired) to a boil. Cover, reduce heat to simmer and cook for 20 minutes or until quinoa is cooked. Fluff with a fork and cool. Add black beans, corn, onions, tomatoes, olives, jalepenos and cilantro. In a small bowl, combine olive oil, lime juice, cumin, salt and pepper. Pour over salad and mix to combine. Serves 4.
