Number of Servings: 6


    7 large eggs
    3 TBS. light cream cheese
    1/4 cup shredded cheddar cheese
    1 cup uncooked frozen hash browns (cubed or shredded)
    1/2 cup lean diced ham
    1/2 tsp. Salt
    Dash pepper
    2 TBS Margarine or margerine blend (Light is fine)


Preheat oven to 350. Grease an 8 x 8 glass dish with non stick spray. Put butter in dish and melt in microwave or oven. Set aside to cool.
Chop ham into small cubes. Pour hash browns into dish, then the ham.
Combine eggs and cheeses in blender. Add salt & dash pepper.
Pour over top of ham & hash browns. Cover with aluminum foil and place in oven. Bake for about 30 minutes.
Take foil off and bake an additional 15 minutes. Serve immediately.
