Introduction

This little meal is great in summer. Easy to make and fast to cook. For a bigger amount just double the recipe. This little meal is great in summer. Easy to make and fast to cook. For a bigger amount just double the recipe.

Ingredients

    3/4 cup dry whole wheat macaroni ( I use Catelli brand)
    2 stalks celery
    1 large tomato
    I scallion (spring onion)
    100 grams wild pink salmon
    2 tbsp Hellman's light mayonaise
    salt & pepper to taste ( I don't use any)

Directions

Boil three cups of water in a saucepan
Add macaroni and stir occasionally
Cook 5 minutes for very firm, 6 minutes for firm or 8 minutes for softer macaroni
Meantime, chop up tomato, celery stalks and onion and put in medium or large mixing bowl.
Open tin of salmon and drain
Measure out 100 grams and add to vegetables
Drain macaroni and run under cold water to cool faster.
Add macaroni to bowl.
Mix well
Add 2 tbsp of Hellman's Light Mayonnaise and mix in well.
Add salt and pepper to taste. I have not added the sodium content for salt as I don't use it.
Makes two soup bowl size servings
