    2 medium potatoes
    1/4 cup skim milk
    1 tbsp lite butter


Cook the potatoes in the microwave for 8 - 10 minutes on high. Don't forget to pierce the skin with a fork several times so the potatoes don't explode!

Cut the cooked potatoes into medium sized pieces and then mash in a bowl with the milk and butter.
