Ingredients

2-8 inch low carb whole wheat tortillas (found by the regular tortillas and taco shells), 1/2 cup fat free shredded cheddar cheese, 1 cup chopped fresh portabella mushrooms, 2 tbls chopped onions, 1/4 cup salsa, 2 tbls fat free sour cream.
Directions
Chop mushrooms and onions. Cook mushrooms and onions in a pan coated with non stick cooking spray on medium/low heat for about 3 minutes or until soft. Remove mushrooms and onions from pan and set aside. Place one tortilla in a heated pan coated with non stick cooking spray. Quickley top with mushrooms, onions and shredded cheese. Place second tortilla on top. Cook on medium heat about 3 minutes or until tortilla turns slightly golden brown.. Carefully flip tortilla and cook on the other side an additional 3 minutes or until cheese is melted and tortilla is slightly giolden brown. Slice with pizza cutter into 6 pieces. Serve with salsa and sour cream.
