Ingredients

    2 tbs butter
    1 lg onion sliced
    salt
    1 lb whole wheat penne pasta
    1/3 c EVOO
    3 cloves garlic
    1 sprig rosemary
    1/4 c hazelnuts
    12 oz spinach
    pepper
    nutmeg
    1/2 grated parmigiano-reggiano

Directions

1. in lg skillet, melt butter, add onion. Cook until brown.
2. Boil Pasta until tender. Drain reserving 1c water.
3. In sm saucepan heat EVOO, garlic, & rosemary. Pour into food processor. Add nuts & spinach. Process until thick paste. Season with salt & pepper & nutmeg.
4. Stir pasta, water, & onions. Then, add pesto. Top with grated cheese.
