Ingredients

    eggplant
    6 oz Fat free italian dressing
    6 oz mozzarella cheese, shredded
    Spaghetti sauce
    parmesan cheese

Directions

Preheat oven to 425

Cut eggplant into finger-width slices. Warm italian dressing in skillet and saute eggplant slices on medium heat until tender and most liquid has evaporated. (hint: it's often easier to add the dressing a little bit at a time, especially if you need multiple rounds of cooking to get all the slices flavored.).
Put eggplant slices in casserole dish. Top each slice with a tablespoon of spaghetti sauce, sprinkle until covered with mozarella cheese, and then a dash of parmesan cheese. Bake 20 minutes or until cheese is golden.
