    Country Crock, Shedd's Spread Country Crock Plus Calcium & Vitamins (Soft), 1 Tbsp , 1 serving (remove)
    Cheese - Kraft 2% Italian Three Cheese, 1 serving (remove)
    Green Peppers (bell peppers), 0.25 cup, chopped (remove)
    Onions, raw, 0.25 cup, chopped (remove)
    Egg substitute, liquid (Egg Beaters), .25 cup (remove)
    Red Ripe Tomatoes, 0.25 cup, chopped or sliced (remove)
    Atlantic Salmon (fish), 0.15 fillet (remove)
    egg white, fresh, 4 large (remove)



Remove the skin and bones from the salmon; cut into 1/2-in. chunks. In a skillet, saute the salmon, onion and green pepper in 1/2 tablespoon butter. Remove and set aside.
In a small bowl, beat eggs or egg sub. Melt remaining butter in same skillet over medium heat; add eggs. As eggs set, lift edges, letting uncooked portion flow underneath.
When the eggs are set, spoon salmon mixture over one side, then sprinkle with cheese and pepper; fold omelet over filling. Cover and let stand for 1-1/2 minutes or until the cheese is melted.
