Ingredients

    1 15-oz. can black beans (rinsed, drained, &
    patted dry)
    1 15-oz. can great northern beans (rinsed,
    drained, & patted dry)
    1 C. seeded & chopped cucumber
    1 C. chopped green bell pepper
    1 C. chopped onion
    2 tsp. minced parsley
    1/2 C. cider vinegar
    2 Tbsp. canola oil
    2 Tbsp. sugar
    Artificial sweetener to taste

Directions

In large bowl combine beans, vegetables, and parsley.
In small sauce pan, combine vinegar, oil, and sugar. Heat just until sugar melts. Pour over bean mixture and toss to coat.
Cover and refrigerate for several hours before serving.
Makes 12 1/2-C. servings.
