Introduction

These muffins are loaded with flavor, very low in fat and very moist. I only make a few at at time because with all of these fresh ingredients they will begin to spoil within a few days. This way my husband and I can control our portions without having to throw any away.

Be sure you spray either the muffin tin or the muffin paper liner with cooking spray before adding the batter, so that they will come out clean when they cool.

Number of Servings: 8

Ingredients

    3/4 cup of mashed banana (about 2 small)
    3/4 cup of flour
    2 1/4 teaspoons baking powder
    3/8 teaspoon baking soda
    1/8 teaspoon salt
    3 tablespoons sugar
    3 tablespoons low fat vanilla yogurt (I use Stonyfield Farms)
    3/8 teaspoon vanilla extract
    1/8 teaspoon cinnamon
    dash of nutmeg
    24 large blueberries

Directions

1. PREHEAT oven to 350.

2. IN a large bowl add all of the ingredients, except the blueberries. Stir until thoroughly combined.

3. SPOON one tablespoon of the mixture into 8 prepared muffin tins/liners. Drop in 3 blueberries. Spoon the remaining batter evenly among the 8 muffins. Top each with another blueberry, pressing it slighly into the batter.

4. BAKE for 15-20 minutes until the muffin tops are well browned and a tester comes out clean. Cool (at least) slightly before serving.
