Introduction

I made this for my kids one day & my son named it cowboy noodles, so that's what we call it! It's kind of like a taco pasta salad. Can't beat a all in one meal! It's Yummy! Ingredients

    1lb Ground beef
    2 cups Whole Wheat Elbow Macaroni (dry)
    1.5 cup pinto beans (cooked)
    1/2 cup Frozen Corn, thawed
    1 Tbsp Taco Seasoning**
    1 cup reduced fat Sour Cream
    1 cup Tomatoes, chopped
    1/2 cup Fat Free Cheddar Cheese
    1/2 cup Salsa

    **Note: You can add more or less taco seasoning according to your taste.**

Directions

Cook pasta according to package instructions. Meanwhile, brown ground beef, drain. Stir corn & beans into ground beef & cook until warmed, about 3 minutes. While those are cooking stir taco seasoning into sour cream, set aside. Once pasta is done cooking, drain then add sour cream mixture. Stir ground beef mixture into pasta, mix well. To serve top with cheese, tomatoes, and salsa. You can serve this warm or cold.
