Introduction

This salad is truly a burst of flavor and looks absolutely beautiful. I adapted it from my mom who adapted it from somewhere else.

This is also great with a very light sprinkling of blue cheese (or other sharp cheese) but isn't necessary

Ingredients

    1.33 cup quick cook wild rice
    1.5 cups blueberries (one container)
    1 can mandarin oranges in juice
    3 large scallions (green onions) chopped
    .5 cup slivered almonds
    dash cumin
    3 tbsp Kraft light asian sesame dressing

Directions

Makes 5 two cup servings

Boil water and cook rice according to package. The brand I use takes about 30 minutes.
dust almonds with cumin and toast over low heat until slightly browned and fragrant

When rice is cooked add almonds and toss with 1tbsp of dressing then put in fridge for 20 minutes (this isn't necessary but helps the dressing get into the rice and almonds)
(you could do this as a warm salad and toss everything together immediately)

While rice is cooling chop scallions into small rounds discarding the bottoms and tops but using both white and green parts of the scallion
Add scallions, blueberries and oranges to rice
add other 2tbsp dressing
serve (the longer this salad rests the better the flavors meld
