    2 Cups rolled oats
    2 Cups low-fat milk
    1 teaspoon lemon juice
    1 Cup all-purpose flour
    1 Cup whole wheat flour
    2 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon salt
    1 teaspoon cinnamon
    1/4 teaspoon nutmeg
    2 eggs
    1/2 Cup applesauce
    1 1/4 Cup loosely packed light brown sugar
    2 teaspoons vanilla
    2 Cups chopped fresh strawberries


Preheat oven to 375 degrees. Spray a muffin pan with non-stick coating or use paper liners. In a small bowl, add lemon juice to milk and set aside. In a medium bowl, mix together flours, baking powder, baking soda, salt, cinnamon, and nutmeg In a large bowl, beat together the eggs, applesauce, brown sugar, and vanilla.

Add the rolled oats to the milk/lemon mixture and stir. Let it set for 2 minutes, then add the mixture to the egg mixture. Stir in flour mixture next, just until blended. Gently fold in strawberries.

Fill muffin cups 2/3 - 3/4 full. Bake for 15-20 minutes.

Yield: 24 muffins
