    5 large Yams, chopped
    2 cups brown sugar
    1 cup orane juice
    1 cup water
    1 vanilla bean split lengthwise
    2 tsp. orange zest
    2 tsp. cround cinnamon
    1/2 tsp. salt
    1/2 cup bourbon
    4 tbsp butter


mix yams,sugar, orange juice, water, vanilla bean, orange zest, cinnamon in a stock pot and bring to a boil. Reduce heat to simmer and cook till yams are tender.

Remove yams to a casserol dish. Add boubon to liquid and increase heat and boil until reduced by 1/2. Coat yams with glaze and place in oven 375F oven for 20 min. Remove from oven and add butter. Mix and server.

  • I did not put the burbon/butter sauce on top. These were fantastic! My husband challenged me to make a good candied yam for thanksgiving, and he says they were great! - 11/23/07
