    1 egg
    1 egg white
    1/2 cup brown sugar
    1 cup grated zucchini
    1 medium carrot, grated
    1/2 cup raisins
    3/4 cup flour
    1/4/ cup brown rice flour
    1 tsp baking soda
    1/4 tsp baking powder
    1 1/2 tsp cinnamon
    1 tsp salt


makes 8 servings
Beat eggs. Stir in oil, sugar, zucchini, carrots, raisins & vanilla. Sift rest.Mix all ingredients toether. Pour in wax paper lined loaf pan in 375 degree oven. Bake 1 hour.
