    2.5 pounds potatoes
    2 Tbsp olive oil
    1 tsp ground thyme
    salt and pepper to taste


Coat potatoes with olive oil and sprinkle with thyme, salt and pepper to taste. Place between 2 sheets of tinfoil and roll the edges. Bake in 400 degree oven until potatoes are tender.
