    1 cup couscous
    2 cups extremely finely chopped parsley
    2 Roma tomatoes diced very finely
    3 green onions finely sliced
    1/2 cup pepper (I used yellow for color)
    Juice of 2 lemons
    1/4 cup olive oil
    salt and pepper to taste


Cook couscous as directed on box; set aside to cool.

Mix lemon juice, olive oil and salt and pepper; set aside.

Finely chopped all other ingredients. When couscous has cooled, mix all ingredients together and chill before serving.

Makes 10 1/2 cup servings.
